Sweet Sticky Rice with Mango

What is Sweet Sticky Rice with Mango

Called Khao Niew Mamuang, this is a traditional Thai dessert that is sweet, aromatic, and delicious. The rice is a glutinous rice that has a sticky and chewy texture and is cooked with coconut milk, sugar, and salt to give it a sweet and creamy flavor. It is served with fresh mango slices on the side, which add just the right tangy juicy pop to this creamy dessert.

Why We Love this Sweet Sticky Rice

While rice being used as a dessert can be found in Western culture in dishes like rice pudding, it is much more of a staple in Asia. When I think of rice as a dessert, I think back to my childhood in the Philippines and our traditional rice based desserts like Biko. Maybe this is why this dish has become one of my favorites. Sweetened rice with fruit just reminds me of those special occasions back home when friends or family were visiting.

What to Pair with this Dish

While this dessert will work for any occasion or with any meal, it goes particularly well with meals that feature roasted meats. Try pairing it with our Thai Beef Salad for a Thai food experience the whole family will talk about all Summer. The creaminess of the rice and the sweetness and acidity of the Mango go well with dishes that can otherwise be rather heavy.

Storage

This dish is definitely better cooked to order, but can be stored in an airtight container in the refrigerator. While back home, rice is often left out throughout the day, it should be refrigerated due to the risk of various bacteria that can form in this type of moist rice based food.

Ingredients for Sweet Sticky Rice with Mango

1 cup glutinous rice

2 cans coconut milk

1/2 tsp. salt (to taste)

1/2 cup brown sugar or white sugar

1 tsp. cornstarch

1/2 cup plus 1tsp. water

1/2 tsp. vanilla extract

For the Toppings

2 pcs ripe mango

2 tsp. toasted yellow mung beans or roasted sesame seeds.

Instructions

How to prepare the Yellow Mung Beans

In a frying pan add 2 tsp yellow mung beans over medium heat, stirring constantly until the beans are golden brown. Then transfer into a small bowl and let it cool.

How to Cook Glutinous Rice

Step 1. Wash glutinous rice 3x or until the water is clear and drain.

Step 2. Place the glutinous rice in the rice cooker, then add 1/2 cup of water. Turn on cooker then wait until the sweet rice is cooked.

Prepare Coconut Cream

Step 3. While the glutinous rice is cooking. In a separate pot, add 1 cup of coconut milk, 1/2 cup brown sugar, 1/2 tsp salt and 1/2 tsp vanilla extract, then stir until the sugar dissolves over a medium heat and bring to a simmer and stir. Turn off heat.

Mix Rice and Coconut Mixture

Step 4. Once the glutinous rice is cooked, transfer rice into mixing bowl then pour in the coconut milk mixture, Stir well until the rice is coated in the mixture.

Step 5. Cover the mixing bowl with lid or aluminum foil and let it sit for 20 minutes. The glutinous rice will become sticky and absorb the coconut based mixture.

FInal Plating

Step 6. Transfer sweet sticky rice into a serving bowl, and top with sliced mangoes, drizzle coconut milk mixture and garnish with toasted yellow mung beans. Enjoy!
